A changing magnetic field induces circulating eddy currents in a conductive core, and those currents heat the core and waste power; dividing the core into thin insulated layers across the current paths breaks the loops up, and the loss falls roughly with the square of the layer thickness. It is not done for ease of assembly, for capacitance, or to save material.
